Taking roof apart

I am planning on having my Silver two toned. The painters I spoke to are all trying to convince me to paint the bottom color. I think they are all afraid of removing the top panels.
I want the top color painted along with the interior trim.

Has anyone taken the roof panels apart yet?
I was wondering how hard it would be to remove them for painting.

I also saw a post about removing the interior waterfall.
What about the trim that goes around the top of the dashboard?
