It's usually round steak that is pounded and tenderized. Then dipped in milk - dredged in flour that has added spices. Then fried in lard.
Not exactly healthy cruisine. If you love fried chicken - you would like chicken fried steak. In the south its called Chicken Fried Steak or Country Fried Steak.
