Chicken fried steak (also known as country fried steak) is a piece of beef steak (tenderized cubed steak) coated with seasoned flour and pan fried. It is associated with Southern U.S. cuisine and hospitality. Its name is likely due to chicken fried steak's similarity in preparation to fried chicken, though the dish is also similar to the classic Austrian dish Wiener Schnitzel, a tenderized veal cutlet, coated with breadcrumbs and fried.

We also do chicken fried chicken, which is a chicken breast done the same way. Both are wonderful smothered in white cream gravy.

NYC had a few places that made passable CFS but nothing like the Original Texas version and the cream gravy rarely had any ZING to it.

It's usually round steak that is pounded and tenderized. Then dipped in milk - dredged in flour that has added spices. Then fried in lard. Not exactly healthy cruisine. If you love fried chicken - you would like chicken fried steak. In the south its called Chicken Fried Steak or Country Fried Steak.

Ok,looks like I'd better give up some information so you guys dont go hungry.

First,Mexican....Juanita's.Walk up or drive through only. Some outside seating.Everything made from scratch.Including tortillas. They take cash only.I've been going there 25 years. While it isn't "fine dining" it is some of the best mexican food to be found.

Address,1209 E. 4th st. Ontario CA 91764

Next,I hear all this talk about country fried steak.I know where it can be found in Rancho Cucamonga.Good BBQ can be found there too. Here's some links.....

Thanks for the address. The two best Mexican restaurants in Dallas back in the 70's - both had dirt floors - would take you two hours to get into - how's that for fine dining.
Best Chicken Fried Steak I have found out here is, BJ's Brewery.

Red face Okay I'm officially unemployed now!

Well the chapter known as my University of Houston job for the last six years is officially closed. I have been busting my ass for the past couple weeks to make sure everything is in order by my departure date (today) and it never seems like I was ever going to finish. My boss was telling me "oh relax dont worry about it, just take it easy your last week", but I just couldnt knowing that it may be another several weeks before my replacement starts there. I spent the majority of the day running around campus tying up loose ends and when three o'clock rolled around, I hadnt even begun to pack up my office. My boss even told me that I could leave early when I got everything taken care of, but I knew first thing this morning that wasnt going to happen. I ended up staying an hour and fifteen minutes late to get everything perfectly in order. My co workers stopped by one by one as they were leaving to say goodbye, and asked damn why are you still here?? Well, it has to be done i said.

ANyhow, its over and I am ready for a celebratory drink!

Gotta run!!

I pull outa Houston on Monday
